I have seen other teams drop when struggling against unranked opponents.

Frankly, they shouldn't come out with polls until a third of the way through the season.

You don't see the BCS/FBS/ETC polls come out until the shakeout.

That's true, but beating Texas at Texas isn't like beating an unranked Boston College or Maryland at their place. Plus, they are Alabama, so everybody else kind of has to prove they are better than Bama to get ranked ahead of them.

Besides, the rankings are just for funzies at this point - they don't mean anything.
