And got to thinking about smoking an Edam on the BGE.

I dont have confidence that mine can remain cool enough....pretty sure I would have to have the double grill method.

I haven’t smoked an Edam ball but I’ve smoked cheese. The easiest way is to use pellets and a smoke tray so you can control the heat while still getting the smoke. The tray isn’t necessary but it helps. You can arrange the pellets in a C in a pie plate and light one end and do the same thing.
