I’m doing ham cooked with cloves and pineapple rings, sweet potatoes, corn and dinner rolls. My wife, who is a vegetarian, is doing a vegetable stir fry. Apple pie for dessert. Sweet Riesling for thirst quenching.

Aging a rib roast for 48 hours? Why even bother?

Tonight - stuffed cabbage, carrots with dill, challah, Coppola Cabernet Sauvignon

Tomorrow night - guests at relatives for baked salmon and lasagna, salad, brussel sprouts, home made cookie assortment.

Christmas Day - guests at friends for pork roast, pineapple casserole, string beans, potatoes au gratin, some Argentinian red wine I haven’t picked out yet to bring, more cookies. Note - the hosts are not real drinkers (or very good cooks) so if I want a good wine or a good side dish I have to take it myself. I don’t think they even drink coffee.

Enjoy your meals everyone. Of the three I listed above, tonight’s will be the one I enjoy the most!

My mother and I go all out and are in the kitchen from about noon until 7 rolling out items throughout the day with a heavy seafood theme. On tomorrow’s menu:

Lobster thermador
Oysters Rockefeller
Raw oysters with a mignonette and hot sauce
Steamed littleneck clams
Colossal King Crab (first year of these, legs are as big as my 11 year old’s arm)
Lobster bisque
Goat cheese stuffed mushrooms
Crab cakes
Chateaubriand and a bernaise.

Sister-in-law will be dispensing Old Fashioneds as tomorrow’s cocktail of choice.

Can you tell me more about your stuffed cabbage?

is it more or different than what would go in a stuffed pepper?

I tend to stay out of the kitchen but it’s an old family recipe of my mother’s who has long since passed. We have her handwritten recipe but it doesn’t have exact measurements, it says things like add grape jelly to taste. It’s Eastern European (most likely Polish) in origin rather than Italian and differs in that the sauce is sweet and sour and uses some brown sugar and a bit of grape jelly in addition to tomato sauce, lemon juice, vinegar, ground beef, cinnamon, and uncooked rice. I think the secret is getting the balance of seasonings right almost like Swedish meatballs but not nearly so sweet. I would describe it as “tangy” with the vinegar and brown sugar and cinnamon creating the dominant flavors. Hope this helps.

- 23rd was Grilled Za'atar Chicken with Garlic Yogurt, Kenji Potatoes and Roasted Veggies
- Today is Whiskey-Glazed Roasted Salmon with Miso Rice and a Ginger-Scallion Vinaigrette with Almond Cake
- Christmas Day is traditional Roasted Turkey with Stuffing, Mashed Potatoes, Green Beans with Ginger and Garlic, Sweet Potatoes Baked with Lemon, Cranberry Sauce and Southern-Fried Corn with a Christmas "Bouche de Noel" and Tiramisu for dessert
- Boxing Day is Ricotta Pasta alla Vodka

Oh yeah and Champagne. Lots and lots of Champagne. Went to Reims last summer (about a 90 minute drive for me) and purchased two cases of good champagne at a Chateau at bargain basement prices.

I estimate that it'll probably take me 6 months to lose the weight.

Lasagna for Christmas Eve dinner at home. Christmas is filet mignon at my sister’s house. Christmas Eve will include egg nog with Bailey’s. No alcohol on Christmas because the 26th means a very early wake up and 12+ hour drive to the in-laws in MN.

Now this is an off topic discussion I can get excited about!! Thanks Potter!

Tonight is a modified version of the seven fishes at my in laws. Breaded fried cod, shrimp, scallops, smelts, pasta with clam sauce, pasta with ricotta cheese, and lasagna for the non fish eaters. Along with random side dishes, and appetizers, desserts, drinks, etc. It’s been a family tradition in my father in laws family for decades and my mother in law took it over a few years ago. It’s my favorite family dinner of the year.
Christmas Day is at our house. Beef tenderloin is the main course with potatoes and vegetables. Appetizers are raw vegetables, cheese and crackers, venison sticks, fresh fruit and some other random small fan favorites. Drinks include: wine, expresso martinis, Irish whiskey.
Merry Christmas and Happy Holidays fellas. Enjoy friends and family, life is too short!!🍻🍹

It's been at least 15 years since i experienced a White Christmas. I've lived in both Eastern PA and Western PA for the last 20 years its sad really, What state do you reside in? That looks like a postcard I would receive from someone on vacation. Sweet View.

Merry Christmas

Traditional Byzantine Catholic "Holy Supper."

The meal starts with a prayer followed by eating of a piece of bread smeared with honey and a clove of garlic. The bread symbolizes life and the honey and garlic is everything that is sweet and bitter in life.

Next comes the soup made of mushrooms and sauerkraut. Many families also add babalky, round pieces of bread about the size of a marble. We also serve lentil soup.

After the soup, there are dishes of fish and shrimp, so the meal is meat-less, and pirohy of various kinds.

The meal ends with another prayer.

The photo is from our second home in Star Valley Ranch, Wyoming. We’ve had it for 14 years. The rest of the year we reside in Normal, IL., at least for the next two years until I retire.
