I like to participate in most cultural traditions and the many fish on Christmas Eve is one.

I’ve only had them grilled over charcoal and liked them. Would like to try fried along with six other fishes, but never had the opportunity. Used to see all the fixin’s at the Italian Mkts in Philly and thought it a neat custom.

Don’t overthink it. Broad, hot skillet, coating of oil, seasoning you like, 3-4 minutes ‘til light brown, turn and 3-4 more. Enjoy.

Good and smelts is a contradiction in terms, I.e., an oxymoron.

Fries with eyes!

I really like to use a very fine dusting that has fine corn meal in it. Some of the bagged fish coatings in the grocery store bread/breading section work well. I like Zatarain's Wonderful Fish Fri with a little garlic salt. It you're into a touch of heat, a sprinkle or two of cayenne will get you where you want to go.
