If a player was a true freshman in 2020, the covid year, but redshirted and got the extra covid year, that means he could play until 2025, right? So starting 2026, things will be back to normal?

Correct. As long as they were enrolled in 2020 they get that year free.

Well, four years of eligibility, a redshirt year, a Covid year, six years beginning with 2020 and ending with 2025 inclusive. I can't imagine anything that would stretch eligibility beyond that. I'm suppose someone else can.
