I'm pretty laissez-faire when it comes to safety, but if you're gonna have problem flameups on any kind of grill/smoker, it's often in the first few minutes due to leftover grease or whatever. All joking aside, why wouldn't you want to be at your grill/smoker at start-up? I have a charcoal grill/smoker, a gas grill, a flat top, and an electric smoker. I use them all for different things at different times depending on what I’m cooking and how much time I have.I have a Big Green Egg, but I’m in the live and let live category. If a pellet grill works for you, great, go for it.
Sold my offset. Made great food. Just tired of babysitting it. Sat my gas grill on the curb. Replaced those with a pellet smoker, pellet grill, flattop, and kept my smokey mountain and charcoal grill. Keep eyeballing a gravity fed grill.Well, let’s see. I've got a 36" blackstone, a pitboss, and a regular charcoal grill from Lowes. Love all 3 of them and they all have their uses. Smoked my first turkey on the pitboss this past Thanksgiving and I think that may be my new job every year based on the reception it got, and I love doing ribs and Boston butts on it. I've heard some of Masterbilt gravity fed grills have had issues with catching on fire.Those gravity fed grills don’t last very long. I know a couple of people who had some issues with them after a little use.

I hardly ever use it because it's a pain in the *** to get going, but at least I'm not a girly man using their rec tec or electric smoker all the time because they're easy.I’m going to take a guess and say the ones making fun of the pellet guys don’t even own grills. The Oklahoma Joes are ok but the metal is pretty thin and they tend to “leak” smoke out. If you get one after a couple of uses you can figure out where the sealing issues are and seal them up pretty easily. You can’t beat them for the price.I am a Weber kettle guy, with a Smoke n Sear for using it as a smoker. I wish it was maybe 15% bigger, briskets don't always fit too well.
Anybody fooled with the Oklahoma Joe Highland offset smoker? I've had my eye on one for a minute, saw the Home depots has them on sale.
