Probably one of the reasons why I have blocked arteries today.Worked in a diner in high school, and used to have a solid egg game. I have discovered an easy trick for over easy eggs. Get a glass lid for your sauté pan and cover the pan about halfway through your cooking time. The trapped heat & steam will cook over the yolk and you don’t have to worry about flipping the egg. A solid lid will work as well, but a glass lid lets you keep half an eye on the egg.

Reuben's / Rueben's are hard for me to ever turn down. Even the half a$$ed versions in the midwest/ save a few awesome deli's.Rueben sandwich with fries and a big crunchy dill pickle washed down with a chocolate egg cream.

i go with breakfast 90% - pretty much everything mentioned here and anytime of the day. If i am going turkey or roast beef, I like the real thing. Turkey comes from a cooked turkey not meat put into a high pressure press. not a fan of the fabricated meats.Breakfast is always the first choice no matter time of day especially if hammered drunk at 2 am
My Mother-in-law is Hungarian and she said this was one of her main dishes growing up. A big slab of fatty bacon skewered with a stick and burned over a campfire. The drippings would be caught on a piece of bread with onion.I don’t cook everything in bacon grease, but I always save my bacon drippings. One of my favorite guilty pleasure is to soften some bacon drippings in the microwave in order to spread it on toasted sourdough instead of butter. Manna from heaven.

It's all good! I just know too many folks from Mississippi that always had a grease can/ jar on the stove. Mom used to do it for a while then just stopped. She was a depression era baby. I used to think it came from that.Stay in the past? F that.
I have the same red Corning Ware small rectangular glass topped container my Dad used to store bacon fat. That beautiful off white substance is used for cooking eggs, fried potatoes, collard greens and spinach, cabbage, and whenever some dish needs a kick.
My son and daughter have similar containers and do the same thing with this precious substance.
Hint: For those of you going thru the Harrisburg Area, stop at Schmidt’s Sausage Shop. Yes, they have the best hot smoked sausage in the world ( many are convinced when they visit my home and eat it cooked in sauerkraut and placed lovingly in a hard crusted roll). But the real prize there is their bacon. It is enveloped in a red spicy coating. When cooked you have a red bacon fat that is spicy and Worth fighting for it is so good. You are welcome in advance.

As a recipient of two five hour surgeries in one day, one for a quadruple bypass and another to fix the mess the surgeon made of the first, I believe it was all worth it.
Be a man, live life, and deal with the consequences. You only get one go at this world, you should enjoy it. A life of caution and sameness is no life at all. The real living takes place at the extremes.

Now anyone with any diner experience knows that you want different orders, depending on the situation.
After 4 - (senior discount baby!), hot turkey sandwich with mashed potatoes and stuffing smothered with gravy with that dollop of cranberry sauce.
Before 10 - 3 eggs sunny side up, fried potatoes (no onion) slice of ham, a barrel of coffee, extra rye toast, and a large tomato juice.
Noon - Turkey club and French fries with no sugar iced tea. Bottle of ketchup
When I’m there alone - Liver and onions, French fries, bowl of chili, sugar free iced tea.
