I’ve Got a couple of options reasonably close where they raise/slaughter/process locally. Much prefer these types over what is usually the most convenient….

We haven’t bought a whole/half lately but you can make a run every couple of months and be pretty well stocked.

Where do I need to start looking? My best bet may be to stick with Sams since my local grocer is stupid high, but I’m wondering if there are places online that aren’t as effected by the Wuhan prices. I thought I’d read to try Snake River Farms on here before, but it’s all ‘American’ wagyu, whatever that is.

I get most of my beef from Butcher Box. It's grass fed, which I enjoy for a variety of reasons. I believe it comes from Australian cattle. It's not cheap but I do think the pricing is in line with what you get, plus it's packed up well. Are you grinding it yourself or having a processor do it? Either way add more fat, 20% is the standard, but try increasing it to 30. Better to cook on the stove (coved) than on the grill (it'll dry out quickly). I did smoke some deer burgers the other day and they turned out awesome

Wife and I get the Home Place Pasture box and it is awesome. I wasn’t a fan at first but it’s good for how healthy some of it is… embarrassingly I don’t know how much it is but we get it once a month.

Which Cavenders rub? I like the butter steakhouse on poultry and use a light dusting of it on beef

One thing you can do is throw a bunch of water bottles in there. Basically whatever space you are not using for meat, keep bottles in there. In the event of failure that buys you a lot of time because that is a lot of thermal mass.

Be careful buying in bulk

Several years ago I bought a 1/4 cow from a local guy at a farmers market. The plan was that when he had 4 people signed up, he’d take it to the processor. What actually happened was that he used me to clean out his old stock. Some was fine, some had an inedible wang to it. When I figured out what I got was old, I complained to the farm owner, he just said that was his former farm managers fault, he’s been fired, sucks for you. Oh well.
I just bought a whole pig from a different guy, hopefully this one goes better.
