Soap, Barney Miller, Taxi, Frasier, Bob Newhart, Mary Tyler Moore, Lou Grant... there's not much today that can touch them.

I am currently working my way through Stargate SG-1. Stargate Atlantis and Stargate Universe are good too. Also working through Babylon 5. Andromeda was also a good one.
Some other TV sci-fi:
Irwin Allen's Voyage To The Bottom Of The Sea, Time Tunnel, and Land Of The Giants. (Lost In Space is OK but the others are better IMO)
Original Star Trek - a true classic
Not sci-fi:
Batman - absolute classic
Great old PI shows: Mannix, Cannon, Rockford Files
Mission Impossible (especially first 3 seasons)
The Saint

More recent (but still oldies, sadly)
Futurama, Married With Children, X-Files, Quantum Leap
I would love to see some of the old B&W TV shows of the 60s remastered and colorized. (first seasons of Wild Wild West and Lost In Space would be good starts - how about Man From Uncle while we're at it)
I know there are a few I'm missing but that'll do for now.
Yes, the first season of Twin Peaks had a great vibe; I actually purchased the sound track CD. They then got lost and didn't know how to finish. The same with the series, Carnivàle.
