What? The best high school teams change their signs week to week. The best college teams change their signs on the fly in game. All NFL teams change signs on the fly.

Michigan has played a high school schedule and is probably going to get embarrassed when the competition gets stiff... again...

Yes, the NFL uses headsets and they also use signals. It's a combination of both.

Yes the best teams do change on the fly. I was on staff for several sec and big ten teams. Depending on the game signals would be changed on the fly.
